The leek, goat cheese, courgette and shrimp puff pastry is an exquisite dish, I usually make it as a starter and it is a dish that surprises all my guests. I encourage you to try it, you will see that it is very easy to do.
Ingredients to make Puff pastry with leek, goat cheese, courgette and prawns:
• 4 leeks
• 1 zucchini
• 120 g of prawns
• 100 ml of cooking cream
• Goat cheese
• puff pastry
• 1 egg
How to make Puff pastry with leek, goat cheese, courgette and prawns:
Cut the leeks and courgette into small pieces and poach them over low heat with a drizzle of oil. It is important that the cut of the zucchini and the leek is very homogeneous and not make it very large.
When the vegetables are almost ready, add the prawns and cook them together with the vegetables. Then add the cream and continue cooking for two more minutes. When the puff pastry filling is ready, preheat the oven to 200ºC, and spread the puff pastry on the baking tray. Make a few cuts into strips on both sides of the dough and put the vegetables in the middle. Add a few slices of goat cheese on top of the filling. Braid the puff pastry and apply beaten egg with a brush on top of the puff pastry. Bake it for about 25 minutes. It depends on each oven, you will see that it is done because the puff pastry will be golden brown. And enjoy this exquisite dish.
