At this article, we’ve been wanting to try a vegetarian, light, easy-to-make and delicious recipe for a long time. With all this in mind, we found the perfect option: a leek cream recipe that you will love. It is made from a combination of delicious vegetables and full of flavor.

Leeks, in appearance, closely resemble chives, although the stem, leaves and bulb are thicker. Like all plants in the same genus, leeks have that unique flavor of onions, but with lighter, milder undertones. For this reason, it is widely used in gastronomy, where it combines perfectly with countless dishes.

Ingredients to make Leek Cream:

  • 1 leek
  • 200 grams of yellow potatoes
  • 1 tablespoon garlic paste
  • 1 white onion
  • 1 cup skim milk or soy milk
  • 1 tablespoon olive oil
  • 1 pinch of salt
  • 1 pinch of pepper

How to make Leek Cream:

  1. In a deep pot, place a tablespoon of olive oil and fry the onions until they turn transparent.
  2. Cut the leek into slices and add it to the pot. You can add the leek leaves to give even more flavor to your light leek cream. Let the leek and onion sauté for a few minutes. Season with salt, pepper and the garlic paste.
  3. Add the skim milk and two cups of water to the same pot. If you want, you can use soy milk to make vegan leek cream.
  4. Cut the potatoes into cubes and add them to the preparation. These will give texture and consistency to the cream. Recipes with leeks and potatoes never fail! Cook for 15 minutes or until soft. Turn off the heat and let stand.
  5. Once all your vegetables are warm or cold, use a food processor or blender to mix them and obtain the cream of leeks.
  6. Pour the cream into the same pot as before, heat it on a burner and serve. Enjoy! This leek cream is perfect to consume before dishes such as a delicious baked chicken curry or an exquisite grilled salmon.
