Latin Man Soup Recipe

Ingredients to make Latin Man Soup:

  • 4 ripe coconuts
  • 1 tablespoon canola oil
  • 1 onion, finely chopped
  • 1 finely chopped red bell pepper (AJI)
  • 2 cloves of garlic minced very fine
  • 3/4 teaspoon ground red pepper
  • 2 ripe seedless tomatoes, peeled and finely chopped
  • 1/2 cup of parsley; fresh smooth, very finely chopped
  • 1/4 cup tomato paste
  • 1 cup light coconut milk (you can use canned coconut milk)
  • 5 cups of fish broth or 4 cups of bottled clam juice. a cup of water)
  • 1 bay leaf
  • 1 green plantain (male) peeled and chopped into small pieces
  • 1 cup precooked crab meat
  • 16 small clams or mussels, washed
  • 1 pound shrimp, peeled and deveined (you can use frozen ones)
  • 2 pounds of sea bass fillet (bass, sea bass) or fresh cod.
  • 1/2 cup breadcrumbs (fresh breadcrumbs, toasted)
  • Salt
  • ground black pepper
  • 2 sachets of colored seasoning

How to make Latin Man Soup:

  1. Pry open the holes in the coconuts with a screwdriver and pour the coconut water into a measuring cup and set aside.
  2. You should give 2 cups of coconut water.
  3. Heat oil over medium heat in a large saucepan. Add onion, red bell pepper, garlic, 1/2 teaspoon of red pepper flakes.
  4. Fry for 5 minutes or until the onion is soft and translucent but not brown.
  5. Increase the heat to medium-high and add the tomato and 1/4 cup of the parsley and the two packets of colored seasoning.
  6. Fry for 3 minutes Add the tomato paste and fry for 3 minutes.
  7. Add the water and coconut milk, fish broth or almond juice and water, bay leaf, and banana.
  8. Bring to a boil and cook for 3 minutes.
  9. Add the cup of crabs and cook for 5 minutes.
  10. Add the clams or mussels and cook for 5 minutes. Add the shredded and washed shrimp, fish or cod, and the breadcrumbs.
  11. Season with salt and pepper. Cook for 5 minutes or until plantain is soft and broth has thickened slightly.
  12. Discard any clams or mussels that are still closed or broken.
  13. Add the remaining 1/4 cup of parsley and boil for one minute.
  14. Season with more salt and pepper if desired.
  15. This recipe is for those Latinos who work a lot and to recharge their body.
