Ingredients to make Ragut of lamb shoulder:
- 1 glass of olive oil
- 2 glasses of water
- 1 clove garlic
- 8 artichokes
- 1 pinch of saffron
- 1 broth, cube
- 1 large onion
- 5 kilos of lamb shoulder
- 1 kilo of potatoes
- 1 pinch of ground black pepper
- 1 pinch of salt
- 2 tablespoons of vinegar
- 2 glasses of white wine
- 4 carrots
How to make Lamb Shoulder Ragut:
- Season the lamb cut into pieces with salt and black pepper, sauté with the onion until it turns coloured, then add the sliced carrots, the crushed garlic and saffron.
- Continue sautéing a little more and water with the wine, cook for 5 minutes and add the water and the stock cube.
- Let it boil until the meat is tender.
- Then add the diced potatoes and artichokes.
- At the end add the vinegar and let everything cook until the sauce is half.
