Juane’s recipe for rice and chicken

Ingredients to make Juane with rice and chicken:

  • For 6 people:
  • 6 pieces of chicken leg (it can be another type of prey)
  • 6 units olive
  • lard at a ratio of 1 per 1/2 kg of rice
  • garlic
  • bay leaves
  • Pepper
  • cumin
  • oregano
  • achiote
  • Salt
  • 6 beaten eggs
  • 6 hard-boiled eggs
  • 1 medium heads of onion
  • Bijau, achira or banana leaves.

How to make Juane with rice and chicken

  1. A very light stock is prepared with the chicken legs, verifying that they are afraid to cook, they are reserved.
  2. Cook the rice with the water from the bottom and a spoonful of butter, check the salt and reserve.
  3. A sauce is prepared separately with butter, onion, achiote, oregano and the bay leaves are added, in which the chicken pieces are browned.
  4. This sauce (the dams are removed) is mixed with the rice and the beaten eggs, checking the salt.
  5. The leaves (bijau, achira or banana) are passed at a certain height of the fire so that they do not dry out.
  6. Then, the leaves are distributed on a table and a portion of rice, a chicken leg, an olive and a hard-boiled egg are placed on each one.
  7. It is shaped into a ball and wrapped with the leaf, tying it carefully.
  8. Then the Juanes are put in a large pot and cook with a little water for approximately 40 minutes.
  9. One unit is taken out and served for each dish and Happy San Juan Day.
