Jijona nougat recipe without sugar

In this article we love Christmas and its recipes. For this reason, on this occasion we propose a traditional recipe that, surely, more than one does not know how to prepare: homemade Jijona nougat. You will be surprised how easy it is to make this Jijona nougat recipe, and how few ingredients you will need to make your culinary creation shine on the Christmas tray. Likewise, and thinking about the amount of sweets that are eaten these days, we have reduced the sugars in the recipe to a minimum, substituting honey and sugar for maple syrup. Without them, this sugar-free Jijona nougat is just as delicious as its sugary brothers. Let’s go cook!

Ingredients to make Jijona Nougat without sugar:

  1. 4 tablespoons of maple syrup
  2. 250 grams of Almond
  3. 1 egg white
  4. 1 pinch of lemon zest

How to make Jijona Nougat without sugar:

  • First we list the ingredients. In our case we have replaced the sugars of the traditional Jijona nougat with maple syrup.
  • To start making the homemade Jijona nougat, we toast the almonds until they acquire a golden color that says “eat me”.
  • Melt the maple syrup with a little lemon zest in a saucepan over the heat, turning it to a minimum. We remove from time to time so that it does not stick and the sugar-free nougat is perfect
  • When it starts to boil, we mount the clear to the snow point. We carry out this step so that the sugar-free Jijona nougat obtains a better consistency and texture. To do this, you can use electric or manual rods or even two forks.
  • Chop the toasted almonds in a food processor until they become powder to make the homemade nougat.
  • And add the beaten egg white little by little to the cream that is formed with the warm syrup. We integrate it by making enveloping movements to prevent it from losing volume and thus making the sugar-free Jijona nougat delicious.
  • Finally, we add the ground almonds and stir well until obtaining a smooth cream.
  • We cover the bottom of the mold that we are going to use with parchment paper greased with oil. On the paper we pour the sugar-free nougat preparation and cover it with more paper. Press well and take the mold to the refrigerator until the next day.

Trick: I recommend you put a weight on the nougat so that it weighs down before.

  • The next day, we can carefully unmold it to proceed to serve it and enjoy this quick and easy Jijona nougat.
  • Once removed from the mold, we can cut the sugar-free Jijona nougat with a knife to even it out.
  • Ready! The sugar-free Jijona nougat is ready to be tasted, accompanied by coffee or hot chocolate, and more nougat!
