Ingredients to make Jigote Santiaguero:
- 1/4 pound lean ground beef without skins
- 1/4 of a medium onion
- 2 cloves of garlic
- 1/2 bunch of fresh coriander
- 2 medium potatoes or 1 large
- 1 sprig of thyme
- 3 sweet peppers
- 1 bunch of fresh parsley
- Salt
How to make Jigote Santiaguero:
- I remember this recipe from my grandmother, I have seen Jigote Soup recipes from several Latin American countries but different from my grandmother’s and I propose it to her, she made it to get over a fever or bad digestion, very timely by the way, easy and fast of doing.
- In a saucepan, pour 3 cups of water and add the seasonings and salt to taste, cover and let it boil for approximately 15 minutes until obtaining a broth.
- Peel the potatoes and chop them into small squares, like dice, and add them to the broth incorporating half a cup of water.
- Let it boil with the pan covered for 15 minutes, without letting it thicken too much.
- Serve in a cup or deep plate in such a way that the patient can consume it in bed if necessary.
