Japanese Noodles with Vegetables and Tuna Recipe

Ingredients to make Japanese noodles with vegetables and tuna:

  1. 75 grams of soba noodles
  2. 2 large carrots
  3. 1 small zucchini
  4. 300 grams of fresh tuna
  5. 1 splash of soy sauce
  6. 1 splash of extra virgin olive oil
  7. 1 pinch of ground black pepper

How to make Japanese Noodles with Vegetables and Tuna:

  • We start by peeling the carrots and zucchini and cutting them into slices to prepare our yakisoba noodles with vegetables.
  • In a pan we put a drizzle of extra virgin olive oil and put it on the fire. When it is hot, add the vegetables and sauté until soft, stirring frequently to prevent it from sticking or burning.
  • Heat water in a saucepan and when it starts to boil add thesoba noodles and cook for three minutes. We drain and reserve. Meanwhile we cut the fresh tuna into cubes and reserve.
  • Tip:Prepare the noodles always following the instructions on the package. Almost all brands are made the same but it is important that you read the packaging.
  • When the vegetables are almost done, add the fresh tuna cubes to the pan and season with a pinch of pepper. Sauté the tuna cubes together with the vegetables and when they are almost done (two or three minutes will be enough to avoid overcooking the fish and make it dry) add the Japanese noodles with the soy sauce (a good splash).
  • Trick:Be careful not to abuse the soy sauce that contains a lot of salt and will make the yakisoba noodles inedible.
  • Mix the soba noodles with vegetables well, cook for a couple of minutes and that’s it!
  • We serve immediately and enjoy a healthy dish of Japanese noodles with vegetablesand tuna prepared at home.
