Italian Tripe Recipe

Ingredients to make Italian Mondonguito:

  • 500 grams of tripe cooked in strips
  • 500 grams of French fries in strips
  • ½ cup of cooked peas
  • 50 grams of Parmesan cheese
  • ¼ cup of oil
  • 1 unit of Onion
  • 1 unit of peeled tomato
  • 2 tablespoons of tomato paste
  • 1 teaspoon ground paprika
  • 1 cup of Mushrooms
  • 2 bay leaves
  • 1 pinch of salt

How to make Italian Mondonguito:

  1. Boil the tripe in salted water.
  2. After a reasonable time remove it, drain it and cut it into strips.
  3. In another pot you prepare the dressing.
  4. You fry the onion, tomato, tomato paste, pepper, mushrooms and bay leaf.
  5. You let it cook with a little water and add its point of salt.
  6. When it has broken the boil, add the tripe, peas and carrots.
  7. Once ready, add the chips, sprinkling Parmesan cheese, and if you wish, chopped parsley.
  8. Serve it accompanied by a good portion of grained white rice.
