Iberian ham and cauliflower soup recipe

Ingredients to make Iberian ham and cauliflower soup:

  • For 3-4 people:
  • grated parmesan (optional)
  • Pepper
  • Salt
  • 2 carrots
  • 1 leek (with its green part)
  • 2 potatoes
  • a few slices of Iberian ham
  • water or vegetable broth (750ml)
  • fresh parsley
  • 300 gr of cauliflower in bouquets

How to make Iberian Ham and Cauliflower Soup:

  1. Here the vegetables washed and chopped. We will separate the cauliflower bouquets with a little patience, in the end they come out and many, it is important that they are small.
  2. Sauté the vegetables for about 10 minutes with a little olive oil and salt, all except the cauliflower. You can throw it if you like later in the very tender soup.
  3. While frying, we will cut the ham into small pieces. We will reserve.
  4. When the vegetables have sautéed, add the broth and a pinch of salt and pepper.
  5. When it starts to cook, we will leave it for 5 minutes. Then we will throw the corsages.
  6. We will cover and let cook 20 more minutes, we will try salt.
  7. Once the bouquets have finished cooking, you can add the grated stem of the cauliflower and boil for a couple more minutes.
  8. We are grating the parmesan and we will take it to the table.
  9. We serve the soup on the plate with the ham and chopped parsley.
