Ingredients to make horse mackerel on the back:
- 3 large mackerels clean and open
- 1 kg of potatoes
- 250 grams of Bierzo peppers
- olive oil
- 7 garlic cloves
- fine salt to taste
- 1 splash of vinegar
How to do horse mackerel on the back:
- Line a baking sheet with aluminum foil and smear it with oil.
- Place the three horse mackerel on the plate and put them in the oven to roast.
- While the horse mackerels are roasting, cut the potatoes to the bakery and fry them.
- Chop the garlic cloves, take the equivalent of 3 minced garlic cloves and brown them in a pan with oil.
- When you have the golden garlic, introduce and sauté the Bierzo peppers and reserve.
- Now that you have the fries and the sautéed pepper, take the horse mackerel out of the oven, add the potatoes and peppers to the tray, and return to the oven and cook for 10 more minutes.
- Meanwhile, put a frying pan on the fire with olive oil and the rest of the chopped garlic, and when they are golden brown, add a good splash of vinegar over the oil and garlic.
- Tip: When frying the garlic, you can also add some rings of chili pepper to the sauce.
- Remove the tray from the oven, pour the sauce that you have in the pan over the horse mackerel on the back and sprinkle fine salt over the entire tray to taste.
