If you feel like eating some good crunchy battered cod tacos, this is an option that you cannot rule out. We will use the honey in the preparation of the mixture for the tempura and the result will be a sweet and sour battered fish… spectacular!

Ingredients to make cod in honey batter:

  • 1 piece of code
  • 400 grams of pearl onion
  • 75 grams of wheat flour
  • 1 bottle of sparkling water
  • 2 teaspoons of baking powder
  • 3 tablespoons of honey
  • 75 grams of sugar
  • 1 splash of Balsamic of Modena
  • 1 egg

How to make honey battered code:

  1. We gather all the ingredients on the work table to prepare our cod recipe. Keep in mind that we will use the onions and sugar to prepare a garnish of caramelized onions that is completely optional.
  2. The secret of this sweet and sour battered cod is precisely in the batter, in the mixture that we will use to bathe the fish. So, to make the tempura, we mix the flour with the yeast, the water, the salt and the egg.
  3. Sparkling water gives a crunchy touch to the dough, if not you can use a little sparkling white wine.
  4. When you have mixed everything well and have a uniform paste without lumps, it will be time to add the honey. Stir again and let the mixture rest.
  5. Meanwhile, we peel the onions.
  6. Remember that this part of the honey cod recipe is optional. If you want to serve the dish with another type of garnish, we recommend you try some roasted potato wedges or couscous with turmeric.
  7. To continue with the preparation of the caramelized onions, we put them in a pan with a little oil and let them brown slightly.
  8. When you see that the onions are already taking on some color, add the sugar and stir. Keep cooking over medium-low heat so that a caramel begins to form.
  9. Meanwhile, we are cleaning the fish and cutting it into loins. The idea is to serve a piece for each diner.
  10. When you have all the pieces, we recover the bowl with the tempura and submerge the fish pieces in the mixture.
  11. The idea is that the code is well impregnated with the batter, which should have a slightly thick consistency.
  12. Separately we must have a pot with enough oil already hot, and then we fry the battered cod until it is golden on both sides. When we have it, we remove it on a plate with absorbent paper to remove excess oil.
  13. When serving our plate of cod in honey batter, we place the fish and to one side, the caramelized onions.
