Homemade Spinach Ravioli Recipe

Ingredients to make Homemade Spinach Ravioli:

For the masses:

  1. 400g flour
  2. 4 eggs
  3. 1 teaspoon salt
  4. 1 tablespoon oil

For the filling:

  1. 350 g cottage cheese or ricotta cheese
  2. 60 g parmesan cheese
  3. 60g fresh spinach
  4. 1 egg yolk
  5. 1 pinch of nutmeg
  6. 100g zucchini
  7. salted
  8. Pepper
  9. béchamel sauce
  10. grated cheese to serve

How to make Homemade Spinach Ravioli:

  • Put half of the flour in a bowl and put the eggs, salt and oil in the center. Mix with the flour with your fingers and gradually add the rest of the flour.
  • Work the ravioli dough on a marble, hitting it, until it is smooth. Form a ball and let rest covered for two hours. Meanwhile, finely chop the spinach
  • Mix the remaining ingredients and reserve. Roll out the dough on a floured surface into two thin, equal rectangles. Distribute the filling with the help of a teaspoon and distribute it every 4 cm of distance.
  • Brush the spaces between each fill with water and brush the second rectangle on the top face. Cover the filling with it.
  • Gently press the spaces where it is going to be cut. And with a corrugated pasta cutter, the ravioli are cut. Let rest. Cook in plenty of salted water. Cook in batches for 20-15 minutes. Drain and serve with béchamel, cheese and gratin.
