Ingredients to make homemade quinoa gnocchi:

  1. 120 ml of oil
  2. 500 ccs of lukewarm water with salt
  3. 180 grams of short and cooked spinach
  4. 200 grams of quinoa flour
  5. 1 egg, the yolk
  6. 1 pinch of pepper
  7. 1 cup Parmesan cheese
  8. 1 pinch of salt

How to make homemade quinoa gnocchi:

  • Prepare the dough by boiling the water and adding the flour, stirring constantly with a wooden paddle, cook until a uniform thickness is achieved.
  • Remove from the heat and add the yolk, spinach and seasonings.
  • Extend the dough and cut into circles or cubes, arrange them in a dish to take to the medium oven for 15 minutes with oil and cheese on top.
  • You can prepare a Bolognese sauce to fill them, it will be even better.
