Ingredients to make Homemade Cream of Potatoes:
- For 4 people:
- 4 large potatoes
- 2 onions
- 1/4 paprika
- 1/2 carrot. Optional if you want to give it more color
- Chives to taste
- coriander to taste
- butter to taste
- Soft cheese
- 1/2 cup of milk or heavy cream.
- 1 liter of water or chicken broth. If you want to taste the soup.
How to make Homemade Cream of Potatoes:
- Peel the potatoes and cut them into pieces of the same size.
- Peel the carrot and cut it into pieces of the same size.
- Place the vegetables into the boiling water or broth and add the quartered onions, along with the paprika. Wait for the vegetables to soften.
- When the vegetables are cooked, proceed to blend everything and then pass it through the strainer to remove any fibers that may have remained.
- Pour the cream into the pot and cook a few more minutes over low heat, add the milk or heavy cream.
- When you are ready to serve, place a pinch of butter on the plate if you like, and add a few cubes of soft cheese. And garnish with chives or cilantro.
- Use only one of these herbs so as not to detract from the flavor of the potatoes.
- Check the salt point add freshly ground black pepper. My sister adds some popcorn for her children.
