Ingredients to make homemade Nachos:

  • 150 grams of cornmeal (1¼ cups)
  • 2 tablespoons of common wheat flour
  • 80 milliliters of hot water
  • 2 glasses of sunflower oil for frying
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 splash of olive oil

How to make homemade Nachos:

Mix both flours in a container and stir until they are completely integrated, this prevents the flour from cracking when forming the dough and it will be easier to handle. Do not forget that corn does not contain gluten and, therefore, does not make the dough more rubbery. Also add the salt and a little pepper; stir so that they also integrate with the flour.

Tip: You can do without the pepper or add some other spice if you prefer, although they will be ideal that way.

Transfer the mixture to a large container to be able to knead and add the oil. Stir to mix and then, little by little, pour in the hot water to form the dough. Thus, you will see if you need more or less liquid as you knead. You will see that the dough will detach from the container and you will be able to handle it easily. Form a ball and cover it with a clean cloth and take it to the fridge for 20 minutes. After this time, the dough will acquire more consistency to be able to cut it. Remove from the fridge and put the dough on top of a baking paper to flatten it, help yourself with a rolling pin. Try to make a very thin, rectangular plate. For perfect nachos, cut the edges of the dough to make a more precise rectangle with straighter lines. Cut the zigzag triangles with a knife.

Tip: You can flatten the leftover dough again to make more nachos.

Pour the oil in a frying pan and, when it is hot, add small portions of tortilla chips, and move them with a fork. Let them cool for 2 minutes and put them on absorbent paper. You can serve them with sauces or as an accompaniment to many dishes, homemade nachos  are a perfect and versatile ingredient.
