Homemade Fish and Seafood Soup Recipe

Ingredients to make homemade fish and seafood soup:

  • For 4 people:
  • 400 g of monkfish.
  • 400 g of hake.
  • 200 g of clams.
  • Seafood cream:
  • 200 g of prawns.
  • 300 g of carrot.
  • 300g onion
  • 2 leeks.
  • 40g of rice.
  • 3 ripe tomatoes.
  • 1 glass of cognac.
  • Fish broth or stock:
  • 1 monkfish head.
  • Green part of a leek.
  • 25 liters of water.
  • 8 slices of bread

How to make Homemade Fish and Seafood Soup:

  1. We make the fish broth by bringing the monkfish head (without guts) to a cold boil with the green leek and some parsley stems.
  2. After boiling for 1 hour, strain through a fine strainer and set aside.
  3. For the seafood cream: Finely chop the vegetables and poach.
  4. Add the tomato cut into segments, the heads and the shells of the prawns.
  5. We reserve the prawn meat for the soup.
  6. Flame with cognac, add the rice and wet with a liter of fumet.
  7. Let it boil until the rice is done and grind.
  8. Once crushed we pass everything through the strainer.
  9. We put this cream to boil with the toasted bread for half an hour.
  10. Add the diced fish, prawns and clams.
  11. Let it boil for 10 minutes and season with salt, adding more broth if we want it brothy or less broth if we like it creamy.
  12. Sprinkle chopped parsley.
