Hedgehog Ceviche Recipe

Ingredients to make Hedgehog Ceviche:

  • A kilo of sea urchin pulp
  • Eight or ten lemons
  • An onion
  • Half a teaspoon of ground green pepper
  • Salt
  • Pepper
  • Parsley

How to make Hedgehog Ceviche:

If you buy the whole sea urchins, that is, with the shell, you are going to work hard extracting the pulp. Wash it in water and salt. Once clean, put them in a bowl and proceed to cook them in the lemon juice, with salt, ground green pepper and diced onion. Let it rest for about 15 minutes, and before serving your delicious sea urchin ceviche, sprinkle it with chopped parsley.
