Ingredients to make healthy salad with artichoke:

  • 16 ounces roasted red bell pepper strips
  • 1/2 pound low-fat mozzarella cheese, diced
  • Pepper-to-taste
  • 1 cup of cherry tomatoes
  • 6 ounces pitted black olives
  • 7 ounces pimento stuffed olives
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 8 ounces quartered marinated artichoke hearts, untrained

How to make Healthy Artichoke Salad:

In a large bowl, combine the first nine ingredients and mix well. Cover and refrigerate at least 4 hours before serving, this way the salad will be fresher.

This delicious mixture can accompany slices of toast or, if you are far from carbohydrates, with lettuce leaves.
