Healthy Cheesecake Recipe

Ingredients to make Healthy Cheesecake:

  • 250 grams of cream cheese or whipped cheese %
  • 2 yogurts %
  • 2 eggs
  • 50 milliliters of sugar-free almond drink
  • 2 tablespoons cornmeal (cornstarch)
  • 1 tablespoon vanilla extract
  • 2 tablespoons powdered or liquid sweetener

How to make Healthy Cheesecake:

  1. To start with the healthy cheesecake recipe, you must first heat the oven to 170ºCwith heat on top and bottom.
  2.  Next, in a bowl add all the ingredients except the cornmeal and the 50 ml. of almond milk.
  3.  The sweetener can be liquid, you can also use erythritol and add 2-3 tablespoons, depending on whether you like it very sweet.
  4. Tip: you should know that almond milk can be changed to normal milk or another milk.
  5. Blend everything very well, but without moving the blender much, since we don’t want to introduce a lot of air, just blend and blend everything.
  6. In a glass add the almond milk and 2 tablespoons of cornmeal, (cornstarch) or starch. Mix very well until the starch dissolves.
  7. Add the mixture of milk and corn flour in the bowl with the previous union, remove everything together with a spatula so that it is well integrated.
  8. Prepare an 18-20 cm mold and line it with parchment paper, previously you must have soaked it under the tap.
  9. Then drain well and add to the pan along with the whipped cheesecake mixture.
  10. Also, introduce the cake in the central part of the ovenwith heat up and down. It should stay 30-40 minutes or until the sugar free cheesecake is ready.
  11. To find out if the cheesecake fit is there, click with a tooth pickand, if it comes out dry, it’s ready. You should know that cheesecakes must be tender in the center and, therefore, when they cool down they harden.
  12. Also, if you notice that the surface is browning too much, place a sheet of aluminum foil on top.  When the estimated time is up, turn off the oven and leave the cheesecake with whipped cheese inside the oven with the door open for about 15 minutes.
  13. Remove the healthy pie from the oven and transfer to a wire rack to cool. Then, reserve in the fridge to finish cooling. Ready to eat!
