Healthy Alfajores Recipe

  • 125 grams of whole wheat, oat or gluten-free flour
  • 25 grams of cornstarch
  • 10 grams of bitter cocoa

  • 25 grams of honey
  • 3 tablespoons of neutral oil
  • 1 large egg
  • 1 Teaspoon vanilla extract
  • 1 teaspoon of orange essence or zest
  • 3 grams of baking powder
  • 1 gram of baking soda
  • For the chocotorta filling (3 units)
  • 30 grams of pastry dulce de leche
  • 30 grams of skimmed spreadable cheese
  • For the peanut butter filling (2 units)
  • 30 grams of peanut butter
  • For the fruit filling (3 units)
  • 50 grams of sugar-free homemade blueberry jam

How to make healthy Alfajores:

  1. To start with the healthy alfajores recipe, first dissolve the honey and sweetener in the oil. Season with the essence of vanilla and orange.
  2. Once integrated, add the egg and mix it.
  3. With the help of a fine strainer or sieve, incorporate the dry ingredients, that is, flour, cocoa, cornstarch and baking powder.
  4. Without kneading too much, integrate the ingredients and form a bun. Next, arrange it between two plastic wraps or divider to make it easier to stretch.
  5. Roll out the dough for your healthy alfajores with a stick about half a centimeter high. Next, cut the caps the size you want.
