Homemade croquettes are an institution in Spain, where they are one of the most famous tapas, made with all kinds of ingredients such as mushrooms, chicken and even cooked.
To make croquettes you have to carry out a somewhat long procedure, although not very complicated, however, if you have a Thermomix at home, this whole process will be much simpler and faster. Ingredients to make Ham Croquettes with Thermo mix:
- 2 boiled eggs
- ½ cup of olive oil
- 300 grams of Serrano ham
- 50 grams of onion
- 170 grams of wheat flour
- 600 milliliters of milk (2½ cups)
- 1 pinch of Nutmeg
- 1 pinch of salt and pepper
- Oil for frying
- Breaded
- 2 beaten eggs
- 2 cups of breadcrumbs
How to make ham croquettes with Thermo mix:
We will start preparing our croquettes by finely chopping the Serrano ham. To do this, place the ham in the glass and give it about 5 turbo shots. Remove and reserve. Now, without the need to wash the glass, we will chop the eggs programming for two seconds at speed. Remove and reserve together with the ham.

Now, put the olive oil in the glass along with the onion. Program the Thermo mix for 3 minutes, without a cup in Aroma mode and speed 3-1/2. If you see it start to splash, you can place the basket on the lid. When the machine stops, add the flour and program 1 minute, 100º, speed 2-1/2 to toast it. Then you can add the milk along with the spices to season the dough for the ham croquettes. Mix everything for 10 seconds at speed 6. To finish with the dough for our homemade croquettes, add half of the Serrano ham that we have reserved and activate the Thermo mix for 7 minutes, with Varoma mode at speed 4.
Let it sit for a couple of minutes and then add the rest of the ham along with the boiled egg. Mix again for a few seconds and correct the seasoning with a little salt if necessary. Remove the ham croquette dough from the glass and spread it out on a tray or flat mould. Let it come to room temperature and then reserve in the fridge until the dough is very cold.
Trick: You can freeze the croquette dough to preserve it and use it later.
Prepare the batter station with the beaten egg and breadcrumbs separately, while you heat enough oil to fry. When the croquette dough is very cold, break it into pieces and give them the typical shape of croquettes and pass first through the egg and then through the breadcrumbs. Repeat this operation so that the croquettes have a double batter and fry until golden brown.
