Ingredients to make Ham Croquettes:
- 250 grams of Serrano or Iberian Ham
- 2 units of Eggs
- 70 grams of flour (½ cup)
- 1 handful of breadcrumbs
- 1 liter of milk
- 1 pinch of Nutmeg
- ½ unit of Onion
- 1 clove garlic
- 50 grams of butter or olive oil
How to make Ham Croquettes:
1.To start preparing the homemade ham croquettes, we will take a pot and heat the oil and butter until the latter ingredient melts. Poach the previously finely chopped onion and, when it is transparent, add the ham also chopped very small; we fry everything together.
2.When the previous ingredients are ready, add the flour, stir well and let it cook over a very low heat for 10 minutes. If you want the dough for the Serrano ham croquettes to be thicker, add more flour. Then, we will pour the milk and cream little by little, stirring well so that no lumps form.
3.Let cook for 10 more minutes, stirring constantly to prevent it from sticking to the bottom of the pot. Salt to taste and add a little nutmeg or pepper. Transfer this mixture of homemade ham croquettes to a sufficiently wide and low container. Then, we reserve this container in the refrigerator for 6-8 hours.
4.After the hours of rest in the fridge, we will take portions of dough of the size we want and we will shape it into a croquette. Then, we distribute the flour, the beaten egg and the breadcrumbs in three separate plates. Pass each of the ham croquettes first through the flour, then through the egg and, finally, through the breadcrumbs.
5.To finish the recipe, fry the ham croquettes in a pan with plenty of hot oil. When they are a little golden on all sides, remove them and reserve on absorbent paper to remove excess oil. And ready!
