Hake with pepper recipe

Learn how to make peppered hake by following this easy recipe

Ingredients to make Hake with pepper:

  • 800 grams of Hake Fillets
  • 70 grams of flour (½ cup)
  • 25 grams of Butter
  • 1 glass of fish brother
  • 1 glass of liquid cream or milk cream
  • 1 unit of small onion
  • 1 dessert spoon of peppercorns
  • 1 pinch of black pepper
  • 1 jet of Oil
  • 1 pinch of salt
  • 1 small glass of dry sherry

How to make Peppered Hake:

  1. The first step to make this hake recipe is to cut the fillets into pieces of about 4 centimeters. Season to taste and pass through a bowl with flour until well coated, shake to remove excess flour.
  2. Separately, mix 20 grams of butter with about three tablespoons of oil and heat in a pan. Fry the hake until it is golden brown on all sides. Drain on absorbent paper to remove excess oil and butter.
  3. Chop and fry the onion with the rest of the butter and a little oil in another pan. When it starts to brown add a little flour and stir until lightly toasted.
  4. Trick: You can chop the onion finely or in larger wedges, it all depends on how you prefer to feel it in the sauce
  5. With the pan already off the heat, add the fish broth while stirring so that lumps do not form. Once it is well mixed, return to the heat and cook until it boils, let it cook for a few minutes. Don’t forget to stir constantly.
  6. Next, add the Sherry, the peppercorns and bring it to a boil again. Then add the cream and let it reduce until the sauce thickens to taste.
  7. Trick: To make the sauce thicker, you can add a little dissolved cornstarch
  8. To serve the hake in pepper sauce, place a base of sauce on the plate, top with the pieces of fried fish, and then drizzle with a little more sauce. You can accompany this fish delight with mashed potatoes or the typical green salad.
