Ingredients to make Hake with broad beans:
- 400 gr. of hack
- 1 bag of frozen beans
- 2 onion
- 1 tablespoon of flour
- 1 tablespoon paprika
- 2 bay leaves
- oil
- Pepper
How to make Hake with broad beans:
- Cook the hake in half a liter of water together with a little oil, salt, bay leaf, and an onion.
- Peel and chop the other onion, sauté it in oil- Add to the casserole the paprika, the other bay leaf, the flour, the broth from cooking the strained fish and the beans without defrosting, season with salt and pepper.
- Let it boil for 20 minutes.
- Before finishing cooking, add the shredded hake.
- Scrape and wash the carrots, peppers, zucchini and leeks.
- Cut the ingredients into thin, long strips.
- Cook them, drain them and reserve.
- Cook the prawns in boiling salted water and peel them.
- Cut each hake loin in half lengthwise and season to taste.
- Fill them with the vegetables (reserve some for the sauce) and the prawns.
- Grease a dish with butter and place the hake loins.
- Water with the wine and a little stock and cook in the oven for about 10 minutes.
- Melt the butter in a pan, add the flour and let it brown.
- Pour the fumet and cook, stirring, until thick.
- Add to this béchamel 1 glass of American sauce and mix well.
- Cover the loins with the rest of the American sauce and garnish with the vegetables.
