Ingredients to make Hake with orange sauce:
- 4 slices of Hake
- 2 Oranges (the juice)
- ½ Lemon (the juice)
- 1 pinch of Saffron
- 1 deciliter of olive oil
- 1 branch of parsley
- 1 teaspoon cornstarch
- 2 garlic cloves
How to make Hake with orange sauce:
- We put a frying pan on the fire with a little oil and, while it heats up, we salt the fish slices to taste. Once the oil is hot, lightly fry the hake, turning the fillets so that they cook on both sides.
- Remove the fish from the pan when it is lightly browned and place it in a casserole. We reserve at the moment.
- In the same pan where we fry the fish, we fry the finely chopped garlic and the parsley, also finely chopped.
- When they are ready, we place the fried garlic with the parsley on the hake slices. These ingredients will add a touch of flavor to the really delicious fish.
- Separately, we crush the saffron with a mortar, add the orange juice previously mixed with the cornstarch and the lemon juice, and stir well.
- Pour the previous orange sauce over the fish and cook everything together for five minutes over low heat. If we consider it necessary, we can keep it on the fire for a few more minutes.
- We taste, correct the flavor and serve the hake in a hot orange sauce.
