Ingredients to make Hake in tomato sauce and peppers:

  • 1 medium-sized hake
  • 1 onion
  • 1 zucchini
  • 100 grams of Peas
  • 1 carrot
  • 400 grams of homemade tomato sauce
  • 1 green pepper
  • 1 red pepper
  • 1 splash of olive oil
  • 1 pinch of salt
  • 1 pinch of ground black pepper

How to make Hake in tomato sauce and peppers:

  1. We begin this recipe to make tomato sauce and peppers by preparing the vegetables. Peel and finely chop the onion.
  2. We put a jet of extra virgin olive oil in a large casserole or frying pan and when it is hot add the onion. We also peel and chop the carrot, and add it to the bread.
  3. Wash, remove the stem and the seeds and chop the peppers. We incorporate them into the bread. Finally, peel and cut the zucchini into tiny pieces and add it to the pan along with the peas.
  4. Frequently remove the vegetables from the hake in tomato sauce to prevent them from sticking. If necessary we can add a splash of water or white wine.
  5. Trick: We can put and remove vegetables to our liking.
  6. When the vegetables are done, add the homemade tomato sauce and add salt and pepper to taste. Mix well and let cook over low heat for a few minutes.
  7. Tip: If we don’t have homemade tomato sauce, we can add a couple of peeled and split tomatoes to our vegetable stir-fry.
  8. When we buy the hake we will ask our fishmonger to remove the scales, the head and the skin and open it in two. We review in case we have any thorns left and we split each part of the hake into two or three pieces.
  9. Tip: Hake can be frozen, either in pieces or fillets.
  10. Add the hake to the casserole, distributing the pieces well, cover and let cook. It will take 7 to 10 minutes for the hake to be done in tomato, pepper and onion sauce. We should not overcook it because the fish will be dry.
  11. Trick: Once the fish is incorporated, to prevent it from breaking, instead of moving it with a spatula to prevent the sauce from sticking, I lift the casserole from the plate and shake it gently.
  12. We serve the hake in tomato sauce and peppers immediately. We can accompany it with a rich salad and we will have a complete, healthy and balanced meal.
