Hake recipe in piquillo sauce

We are going to prepare a delicious recipe for hake in piquillo pepper sauce, a simple dish with few ingredients and perfect to surprise our guests. Fish is a very nutritious food, rich in protein, omega 3 fatty acids, minerals and vitamins, so it is recommended to eat it several times a week. Within the broad group of fish, hake is one of the most popular due to its low caloric content and its versatility when cooking it, as it combines perfectly with practically any sauce or garnish.

As we say, hake can be prepared in many ways, however, this time we wanted to make it with an incredible piquillo pepper sauce. This sauce lasts several days in the fridge, so it is an excellent option to make more and use it in other fish or meat recipes. That being said, stay with us and discover how to make hake in piquillo sauce.

Ingredients to make Hake in piquillo sauce:

  • 1 jar of piquillo peppers
  • 4 pieces of hack
  • 3 garlic cloves
  • 200 milliliters of heavy cream or evaporated milk
  • 1 jet of oil
  • 1 pinch of salt
  • 2 tablespoons of wheat flour

How to make Hake in piquillo sauce:

  1. Start the recipe for hake with piquillo peppers with the sauce. To do this, heat a frying pan with a jet of oil and, meanwhile, peel and cut the garlic into slices. Once hot, sauté the garlic over medium heat, making sure they don’t burn.
  2. Before they brown, add the piquillo peppers and let them cook for approximately 5 minutes. Then, add salt to taste and a little of the one that the peppers brought in the boat.
  3. Add the milk cream (cooking cream) and let everything cook together for another 5 minutes. If you see that the sauce dries out a lot, add a little more of the water from the peppers or vegetable broth. If you prefer to make a healthier recipe, you can substitute the milk cream for evaporated milk.
  4. Transfer the sauce to a bowl and blend it until you get a fine cream. Put it back in the pan, taste it and add more salt if you consider it necessary. If it is too thick you can add more broth, water, milk cream or evaporated milk.
  5. Many people make hake with piquillo peppers and clams following this same recipe and adding clams. If you feel like trying this option, we recommend steaming the clams and then adding them to the sauce.
  6. Clean and cut the hake into slices or fillets, preferably boneless. Salt the fish and pass the pieces in flour so that it is left with a crunchy touch on the outside. We have chosen to make battered hake in piquillo sauce, but you can also cook it in the oven without having to pass it through flour.
  7. Heat another frying pan with a good splash of olive oil and brown the hake on both sides. When the fish is ready, remove it. You can also cook the hake on the grill if you prefer to reduce the calories of the dish.
  8. Now all that remains is to combine both preparations to serve the dish. At this point you have two options: add the fish to the sauce pan to mix it up or serve it and add the sauce on top. Although both options are good, so that the fish does not taste too strong, we advise you to opt for the second option, since this way each diner can add the amount of sauce they want. You will see that the hake in piquillo sauce is spectacular and surprises everyone. In addition, it is a perfect dish for special occasions.
