Hake recipe in almond sauce

Ingredients to make Hake in almond sauce:

  • 1 kilogram of fresh hake
  • 100 grams of almonds
  • 600 grams of durum wheat
  • 1 leek
  • 2 carrots
  • 1 red onion
  • 1 green pepper
  • 1 splash of olive oil
  • 1 pinch of salt
  • 1 pinch of pepper
  • 25 grams of wheat flour

How to make Hake in almond sauce:

  1. Place the almonds in a pot of boiling water, cook them for 1 minute and drain them. This type of cooking is known as “blanching” and makes it easier to remove the skin.
  2. Peel the almonds one by one and reserve them. Although it seems a somewhat heavy step because it is necessary to peel them one by one, the truth is that it will only take a few minutes. However, you can always make the almond sauce leaving the skin on.
  3. Tip: You can also peel the almonds by placing them on a dry cloth and rubbing them all together.
  4. Clean the hake and save the discarded parts, such as the skin, fins or spine to make a fish stock, which will be the base of the sauce.
  5. Put the peeled and chopped carrot, the cut leek and half an onion cut into large pieces in a pot with cold water. Also add the discarded parts of the fish and heat everything over high heat until it boils. When it starts to boil, cook for 20 minutes over medium-low heat. By making the broth with various vegetables and parts of the fish, the hake in almond sauce will have a truly exquisite flavor.
  6. Cook the durum wheat in another pot with boiling water for 25 minutes, or until you notice that it is tender. This is a variety of wheat that is widely consumed throughout the world and can be found in almost any supermarket. We will use it to accompany the hake in almond sauce, so you can replace it with rice if you can’t find it.
  7. Melt the butter in a saucepan over the heat and, when melted, add the flour and mix with a hand whisk. You will have to cook the flour but without it getting to take on color.
  8. When the butter and flour are completely mixed, pour in the broth that you made with the vegetables and fish, but without stopping beating with the rods until you get a thick sauce without lumps.
