Hake cocochas recipe with green sauce

Ingredients to make Hake Cocochas with green sauce:

  • 1 kg. of hake kokotxas
  • 3 garlic cloves
  • 1 chili
  • salted
  • 1 tablespoon of flour
  • 1 glass of white wine
  • chopped parsley
  • Toilet
  • extra virgin oil

How to make Hake Cocochas with green sauce:

  1. Clean the kokotxas well and trim the excess skins. Extend them on a clean cloth to dry, the seasoning reserves.
  2. Place two fingers of water in a casserole with a sprig of parsley, salt and the remains of the kokotxas. Let reduce.
  3. Peel and slice the garlic cloves and the chili and brown them in a wide casserole with oil.
  4. Cook over very low heat and watch that the garlic does not brown too much. Extract the garlic and chili to a plate.
  5. Add a tablespoon of flour to the casserole and sauté well. Pour the glass of white wine and a little brother.
  6. Stir well; add chopped parsley and then the kokotxas. Cook them for 2-3 minutes. At the last moment, sprinkle the chopped parsley and the comfit garlic and chili. Serve very hot.
