Ingredients to make Haddock in green sauce:

  • 2 kilograms of potatoes
  • 1 kilogram of haddock
  • 1 green onion
  • 2 white onions
  • 1 glass of white wine
  • 1 dessert spoon of wheat flour
  • 1 branch of chopped parsley
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 jet of oil
  • 3 dessert spoons of lard or butter
  • 2 garlic cloves
  • 200 milliliters of fish or vegetable broth

How to make Haddock in green sauce:

  1. To start, wash, peel and cut the potatoes into pieces about 5 cm high. Make sure that the sizes are similar to match the cooking times. If you have leftover pieces when cutting the potatoes, you can take advantage of them to make a mashed potato or some homemade potato gnocchi.
  2. Place the potatoes on a tray or container suitable for the oven, add the butter and water until reaching half the height of the potatoes and bake for 40-45 minutes at 180ºC. It is important that the oven is already hot, so preheat it in advance.
  3. While the potatoes are baking, clean the haddock by removing the skin and bones.
  4. Cut the fish to your liking, although you can also cook the haddock in green sauce without cutting it.
  5. Finely chop the parsley and cut the onion into julienne strips. Then, peel the garlic cloves and chop them too, just like the green onion, which should be fine.
  6. Heat a pan with a little oil and cook the pollock fillets. You simply have to seal them on both sides, so a few seconds will be enough.
  7. Once sealed, season with salt and pepper to taste, remove them and reserve them to continue with the haddock in green sauce recipe.
  8. In the same pan, add a little oil and sauté the garlic first. Then add the onions and cook for a few minutes.
  9. When the vegetables are tender and transparent, add the flour and stir to cook it for a few minutes so that the haddock in green sauce does not taste like raw flour.
  10. Once the flour is cooked, pour in the glass of white wine, let the alcohol evaporate and add about 200 ml of fish or vegetable broth.
  11. Tip: If you don’t have a brother, you can add water.
  12. After a couple of minutes, put the fish fillets back in the pan.
  13. Cook the haddock with all the sauce and the vegetables until it is just cooked and add plenty of parsley. Keep in mind that parsley is the star ingredient of the green sauce, so add the amount you consider appropriate.
  14. Trick: In case the willow is reduced too much, you can add water or broth.
  15. To emulsify the sauce and incorporate the parsley, take the pan and make circular movements with it. Remember to take the potatoes out of the oven when they are done.
  16. The potatoes have to be golden on top and very tender on the bottom, in this way two different textures are achieved.
