Ingredients to make Aporreadillo guerrense:
- For 4 or 5 servings:
- 8 beaten eggs
- 2 carina steak (salted dried meat) or they can be beef steaks previously fried in a little corn oil and later shredded
- salt to taste
- 2 tomatoes
- 2 cloves of garlic
- 1/4 onion
- 1 bunch of coriander
- 6 Serrano or cuaresmeño peppers also called jalapeños
How to make Aporreadillo guerrense:
- In a frying pan, sauté the carina again and crumble it in enough corn oil, then add the beaten eggs, which are previously seasoned with salt and pepper, stir everything so that it finishes cooking.
- Reserve in the pan.
- Separately, the sauce is made as follows: Boil the tomatoes and chilies or roast them to taste and each one, if it is roasted, remove the skin from the tomatoes and proceed to blend.
- Blend the tomatoes, chills; garlic cloves and onion with enough water, once blended add the chopped cilantro to the sauce.
- The sauce is ready.
- This is added to the scrambled eggs with the carina, which were reserved in the pan, the sauce is seasoned with salt and pepper and a little powdered chicken broth.
- Let the sauce boil with the scrambled eggs with the carina so that the flavors are incorporated.
