Guargueros Recipe

This recipe is one of the most consumed desserts in Peru. The history of the guargueros tells that this preparation was formerly called convent sweet, since the nuns invented it in the convents. Los guargueros are born as a result of a fusion between Peruvian cuisine and Spanish cuisine. Specifically, the guargueros in Lima are very popular, it is believed that they originated thanks to an inspiration from the well-known Spanish dessert Gaznate, the only difference is that the latter is filled with fruit cream. Making the guargueros is very easy, you will only need: white manjar or dulce de leche, wheat flour, egg, unsalted butter, pisco, white vinegar and vegetable oil.

Ingredients to make Guargueros:

  • 230 grams of unprepared wheat flour
  • 7 eggs
  • 60 milliliters of pisco
  • 3 dessert spoons of vinegar
  • 2 grams of salt
  • 1 can of manjar blanco or dulce de leche
  • 50 grams of unsalted butter
  • 200 grams of powdered sugar

How to make Guargueros:

  1. To start with the guargueros recipe, first melt the butter in the microwave for approximately 10 seconds, it is important that the butter does not stay hot.
  2. Pour it into a large container.
  3. Separate the yolk from the white of each of the eggs.
  4. In the butter container, add the egg yolks, salt, wheat flour, white vinegar and pisco.
  5. Move with the help of your hands until you form a homogeneous mass.
  6. Cover the dough with plastic wrapand let rest for approximately 20 minutes.
  7. After time, stretch the dough with the help of a roller. We point out that the dough must be fine.
  8. Cut the dough with a circular cutter or with a glass.
  9. Roll the pasta and create the shape of the guarguero, close the ends with water.
  10. In a small pot, heat vegetable oil over low heat and fry each of the Peruvian guargueros.
