I have always liked guacamole but I don’t know why I had never encouraged myself to do it. I have finally done it and also, making a small nod to the East by adding pomegranate. Since the tomatoes I had weren’t too good, I thought that so they wouldn’t add anything, I’d better add something else, and I thought of this fruit. And what a great idea! The sweet touch goes great with the avocado, it contrasts with the onion and helps with the texture. Without a doubt a great success. I made a large bowl of pomegranate guacamole and there was none left over. It was that good! Write down this recipe that I share because you will surely want to try it 🙂
Ingredients to make Guacamole with pomegranate:
• 3 small or 2 large ripe avocados
• ½ small red onion
• ½ pomegranate
• 1 lime (juice) or half a lemon
• ½ green chili
• 1 tablespoon fresh coriander (large)
• Salt to taste
How to make Guacamole with pomegranate:
Chop the onion and chili into small pieces and transfer them to a bowl. Squeeze the lime or lemon juice and add it too. Peel the pomegranate and add the grains to the previous bowl.
Peel the avocados and mash them in a mortar. We don’t want a puree, we want some chunks left, to help with the consistency of the fruit guacamole.
Tip: (it is important that they are well ripe)
Add the mashed avocados to the previous bowl. Finally, add the chopped fresh cilantro and salt to taste. We mix everything very well. We keep the guacamole with pomegranate in the fridge until a while before serving. You will see how delicious it is as a cold aperitif or in a snack dinner. Without a doubt, one of my favorites.
