Ingredients to make Mallorcan style grouper:
- 6 slices of grouper of 250 gr. each
- 1000 gr. of onions
- 500 gr. of ripe tomatoes
- 1 sprig of fresh parsley
- 1 head of garlic
- 1500 gr. of potatoes
- 1 glass of white wine
- 1/2 liter of olive oil
- 50 gr. of raisins
- 20 gr. of pine nuts
- 8 bunches of stir-fry
- a bunch of parsley
- a pinch of pepper
- salted
- A glass of white wine.
How to make Mallorcan style Grouper:
- Peel the onions and garlic.
- Cut the onions in half and wash them.
- Once washed, cut the onions, garlic, parsley, stir-fry and very small tomatoes.
- Heat the olive oil in a large clay pot.
- Next, place the grouper slices in said casserole so that they brown.
- Once they have taken color, take them out and reserve them.
- Next, and in the same oil where we have fried the fish, we will sauté the onions, the fried potatoes, the parsley, the garlic and the tomatoes until everything is half cooked.
- The potatoes cut into slices, not too thick, are then placed in a bowl
- The grouper slices are arranged on these and the whole set is watered with a small glass of good quality white wine
- At the same time, all the sauce is poured over the fish and, as a traditional touch, the pine nuts and raisins are spread on top.
- Finish cooking by placing the fish dish in the oven for about twenty minutes at a mild temperature.
