Grouper fillets in wine recipe

Ingredients to make grouper fillets in wine:

  • 1 kilo of grouper fillet
  • 100 grams of chives
  • 3 deciliters of white wine
  • a glass of milk
  • 4 tablespoons of olive oil
  • white pepper
  • a few sprigs of parsley
  • salted

How to make grouper fillets in wine:

  1. Chop the spring onion into brounoisse (small mince), and cook it in a pan over low heat with 2 tablespoons of olive oil until soft and set aside.
  2. Preheat the oven to 180º and place the cooked onion in a baking dish and the salt and pepper grouper fillets on top, add the white wine and bake for 15 minutes.
  3. After this time has elapsed and the grouper has been cooked, the spring onion and the juices from the grouper are transferred to a casserole that we put on the heat together with the milk and let it boil and thicken for a few minutes.
  4. Strain the sauce through a strainer, sprinkle with a little chopped parsley and season with salt.
  5. Sauce the hot grouper fillets with this sauce and serve immediately.
