Ingredients to make group supreme with glazed vegetables:

  • 800 g grouper in 4 loins
  • 2 egg yolks
  • 2 garlic cloves
  • 1 tablespoon lemon juice
  • 250ml oil
  • Salted
  • White pepper
  • For the garnish:
  • 2 potatoes
  • 2 carrots
  • 50g butter
  • 1 tablespoon sugar
  • Salted

How to make group supreme with glazed vegetables:

  1. Crush the garlic in a mortar with a few grains of salt.
  2. Add the lemon juice and oil little by little until you have a mayonnaise-like sauce.
  3. Book

  13. Gratin ate at 200 °c for two minutes and serve accompanied by the glazed vegetables.
