Grilled cod with red peppers

  • 450 grams of fresh cod
  • 1 unit of red pepper
  • 1 unit of chives
  • 3 tablespoons of olive oil
  • 1 pinch of salt
  • 1 pinch of ground black pepper

How to make Grilled Cod with Red Peppers:

  1. Once all the ingredients have been gathered to prepare this grilled cod with red peppers, cut the onion into julienne strips and fry it in a pan with 2 tablespoons of olive oil.
  2. Next, we add the red pepper cut into not too thin strips, as seen in the photo.
  3. As you know, red pepper is a natural source of vitamin C (it contains even more than orange). This vitamin helps to absorb iron more easily, so combining red pepper with cod is a perfect tandem.
  4. Let the vegetables cook over low heat until soft. Add a little salt and ground black pepper and reserve. For this recipe you can substitute the spring onion for normal onion or leek.
  5. Separately, in a frying pan add a tablespoon or two of olive oil and when it is very hot, cook the cod on the skin side, just the opposite of the image.
  6. Then, we lower the heat to a medium temperature and let it cook for 3 minutes on each side. In our case, we have used cod to the point of salt, so we do not have to add salt, just ground black pepper.
  7. Trick: So that it does not stick to the pan, it is important to move it with smooth movements just at the moment in which we incorporate it.
  8. Once the grilled fish is prepared, we transfer it to a plate or platter and accompany it with the fried red peppers and chives.
