Grilled cockles with garlic and parsley recipe

Ingredients to make Grilled Cockles with Garlic and Parsley:

  • 500 grams of fresh cockles
  • 5 garlic cloves
  • 5 sprigs of fresh parsley
  • 1 lemon (optional)
  • 1 splash of extra virgin olive oil (abundant)
  • 1 pinch of coarse salt

How to make grilled cockles with garlic and parsley:

  1. Clean fresh cockles by washing them under running tap water 3-4 times so they are free of dirt
  2. Pour a good splash of extra virgin olive oil in a pan and heat it while you peel and finely chop the garlic. Then brown them.
  3. Tip: If you prefer, you can brown the whole peeled garlic or use ground garlic at the end of cooking if you don’t like to find it minced.
  4. Once golden, add the chopped fresh parsley and the squeezed lemon juice to the pan.
  5. Tip: If you don’t like grilled cockles with lemon, you can omit this ingredient.
  6. Add the cleaned cockles and fry the whole thing for about 4 or 5 minutes until the grilled cockles open up well and are impregnated with all the flavors.
  7. Tip: If one does not open, discard it because it means that it was not alive and therefore not fresh.
  8. Sprinkle a pinch of coarse salt over the grilled cockles with garlic and parsley so that that touch of the sea stands out even more.
