Ingredients to make Grilled Cockles with Garlic and Parsley:
- 500 grams of fresh cockles
- 5 garlic cloves
- 5 sprigs of fresh parsley
- 1 lemon (optional)
- 1 splash of extra virgin olive oil (abundant)
- 1 pinch of coarse salt
How to make grilled cockles with garlic and parsley:
- Clean fresh cockles by washing them under running tap water 3-4 times so they are free of dirt
- Pour a good splash of extra virgin olive oil in a pan and heat it while you peel and finely chop the garlic. Then brown them.
- Tip: If you prefer, you can brown the whole peeled garlic or use ground garlic at the end of cooking if you don’t like to find it minced.
- Once golden, add the chopped fresh parsley and the squeezed lemon juice to the pan.
- Tip: If you don’t like grilled cockles with lemon, you can omit this ingredient.
- Add the cleaned cockles and fry the whole thing for about 4 or 5 minutes until the grilled cockles open up well and are impregnated with all the flavors.
- Tip: If one does not open, discard it because it means that it was not alive and therefore not fresh.
- Sprinkle a pinch of coarse salt over the grilled cockles with garlic and parsley so that that touch of the sea stands out even more.
