Grenache Recipe

Grenaches are a typical dish from Mexico, it is a crispy tortilla that is made with a sauce of tomato, meat and potato. Its preparation is very similar to that of Mexican sopes, but the filling is what makes the difference.

Ingredients to make Grenaches:

  • ½ kilogram of roasted tomato
  • ½ unit of roasted onion
  • 5 cloves of garlic
  • 6 chipotle chili (dried, roasted and deveined and soaked)
  • Pork lard as needed
  • 30 corn tortillas
  • ½ kilogram of cooked potato
  • 300 grams of cooked and shredded beef
  • 1 onion
  • 1 pinch of salt

How to make Grenache:

The first step to make the famous Grenache will be to make a base sauce. To achieve this, grind the tomatoes and roasted onion together with the garlic and chili.

Next, fry this sauce in a saucepan with a tablespoon of hot butter. Leave over medium heat for 20 minutes or until you see that the oil floats on the surface. Then, season with salt and let it boil for a few.

Separately, in a large frying pan, heat enough butter and fry the corn tortillas until they are slightly crispy. Don’t leave them in the oil for more than 30 seconds.

To assemble the Grenaches, a tablespoon of hot sauce is spread over each tortilla. Top with some potato, shredded meat and finely chopped onion to taste. They are served hot and you can add a little cheese on top.
