Green Soybean Recipe with Vegetables and Brown Rice

Ingredients to make green soybeans with vegetables and brown rice:

  • 160 grams of green soybeans or mug beans
  • 100 grams of brown rice (½ cup)
  • 1 carrot
  • 1 green bell pepper
  • 1 piece of red pepper
  • 1 spring onion
  • 1 pinch of salt
  • 1 pinch of ground black pepper
  • 1 splash of olive oil

How to make Green Soybeans with Vegetables and Brown Rice:

1 We gather all the ingredients to prepare the stewed green soybeans with vegetables. It is recommended that you leave the green soybeans in water overnight to soften them and thus reduce the cooking time. But if you haven’t planned it, don’t worry; it can be cooked in water for a longer time.

Trick: You could also cook the green soybeans in a pressure cooker if you have this one.

2 Cook the brown rice and the green soybeans separately in abundant boiling water.

3 Meanwhile, we make a sauce with the onion and the diced peppers, all of the same size. Season with salt and pepper and cook for 8 minutes over medium heat.

4 After this time, add the peeled and diced carrot and let it cook another 3-4 minutes.
