Green Gazpacho Recipe

Ingredients to make Green Gazpacho:

  • 5 u. cucumber
  • 3 u. green apple
  • 2 bunch spinach
  • 1 pc. onion
  • 2 clove garlic
  • 1 pc. romaine lettuce (head only)
  • 100 grams White bread
  • 100 cl. virgin olive oil
  • 50 cl. 25 year old sherry vinegar
  • 6l Water
  • 110 grams Salt

How to make Green Gazpacho:

  1. Peel and chop the cucumbers. Core and cut into quarters without peeling the apples. Wash the spinach. Blanch the garlic. Peel and chop the onions. Put all the ingredients together in a saucepan, add the water and let it rest in the fridge for at least 12 hours. Blend and strain and serve cold. If necessary, rectify the salt point. Serve the gazpacho garnished with cherry tomato, fried bread cubes, chervil and julienned spring onion.
