Ingredients to make green chilaquiles:
• 12 tortillas
• 12 green tomatoes
• 2 cloves of garlic
• 1 sprig of epazote
• Serrano chili to taste
• Oil for frying
• Salt
• 1/2 cup cream
• 1/2 cup of fresh cheese crumbled
• 1 onion sliced
How to make Green Chilaquiles:
Cut the tortillas into squares and brown them in oil. Drain fat. Blend the tomatoes, chilies and garlic. Fry them until seasoned, then add salt and the branch of epazote. Add 3 cups of water.
When the sauce is boiling add the tortillas; Leave them for a moment, so they don’t get too soft. Turn off the heat. Serve with crumbled cheese, cream, and onion slices.
