Green Beans with Tomato and Egg Recipe

There are many recipes with green beans and we wanted to make one with natural tomato sauce, accompanied by a poached or poached egg. This recipe for green beans with tomato and healthy poached egg can be eaten as a main dish and also at dinner time. Also, the green beans with crushed tomato can be made ahead of time and the poached egg prepped at serving time.

Ingredients to make Green Beans with Tomato and Egg:

  • 300 grams of green beans
  • 300 milliliters of crushed tomato
  • 1 unit of spring onion
  • 1 unit of green pepper
  • 1 egg unit
  • 1 pinch of salt
  • 1 pinch of ground black pepper
  • 1 tablespoon of sugar

How to make Green Beans with Tomato and Egg:

1 We gather all the ingredients to prepare the green beans with tomato and poached egg.

2 To start, we have to clean and cut the green beans. With the help of a knife, we remove the ends of the beans and pull the vertical strand they have. Some may not have that thread, but if we try to remove it, then we will not find it at lunchtime.

3 Cook the green beans in plenty of boiling water with a little salt. The cooking time for the beans to be more al dente is 8-9 minutes. If you like them softer you can let them cook between 12-14 minutes.

4 On the other hand, we make a sauce with the onion and green pepper chopped into squares. Let them cook in a pan with olive oil for 5 minutes.

5 Add the crushed tomato and put a little salt, a little ground black pepper and a tablespoon of sugar. The sugar makes the tomato lose acidity and the sauce is softer. Let cook for 10 minutes over low heat.

Tip: If necessary, you can add more sugar. You can put fried tomato instead of making the green beans with crushed tomato if you prefer.

6 Once cooked and drained, add the green beans to the sauce and mix so that they integrate with the tomato sauce. It is not necessary to cook them more; we simply mix them and remove from the heat.

7 To poach the egg: place some transparent paper in a bowl, crack the egg on top, add a little salt and close the package as if it were a bag. Boil the egg in plenty of boiling water for 3-4 minutes.

Once poached, we take the egg out of the plastic being careful not to burn ourselves and we present it together with the beans with tomato and egg.
