Ingredients to make Green Aztec Cake:

  2. 1 kilogram of green tomato
  3. 1 piece of onion
  4. 1 polio Chile
  5. 4 Serrano chills
  6. 1 clove garlic
  7. 1 coriander sprig
  8. 2 cups of shredded chicken
  9. 1 cup of corn kernels
  10. 1 cup ranchero cheese
  11. 1 pinch of salt to taste

How to make Green Aztec Cake:

  • To make the green Aztec cake, preheat the oven to 180°C. Then, in a pot with enough water, cook the green tomatoes with the Serrano chills for at least 8-10 minutes. When they are ready, blend these ingredients with the onion, the garlic clove, the cilantro branch, a pinch of salt and reserve.
  • To make the polio chili slices, first roast the Chile directly on the fire or on the grill until the skin changes its color. Then, let it sweat inside a plastic bag for 5 minutes. Then, with the help of a spoon, remove the skin, the seeds and the veins and then cut it into strips and reserve it.
  • Now it’s time to assemble the green Aztec cake. To do this, first pour some of the green sauce on the bottom of an ovenproof container; place a layer of tortillas and a layer of shredded cooked chicken. Tortillas must be dry so that they retain their shape during baking.
  • Add a layer of corn kernels, a layer of rajas and a layer of cheese. Repeat the process until you finish filling the container. The last layer covers it with more cheese.
  • Cover the green Aztec cake with aluminum foil and bake it for 30 minutes. Remove the paper in the last 10 minutes so that the cheese browns slightly and forms a kind of crust.
  • Finally, let it rest for a few minutes in the oven and it will be ready to serve. To eat!
