Green Asparagus Casserole with Egg Recipe

Ingredients to make Green Asparagus Casserole with Egg:

  • 2 bunches of fine green asparagus
  • 4 eggs
  • 4 cloves of garlic
  • 100 grams of raw almonds
  • 6 not too thick slices of bread from the previous day
  • 1 teaspoon freshly ground cumin
  • 1 teaspoon sweet paprika
  • 4 tablespoons of olive oil
  • 1 level teaspoon of salt
  • A little chopped Serrano ham

How to make Green Asparagus Casserole with Egg:

  1. Wash and cut the asparagus into pieces of about 4 centimeters, place them in a large frying pan together with the oil and fry for 5 minutes.
  2. They are removed leaving only the oil in the pan, where we will fry the peeled and sliced ​​garlic, remove the garlic and in the same oil fry the almonds and then the slices of bread until they are golden brown.
  3. In the oil that remains and removed from the heat, put the teaspoon of cumin and sweet paprika, give it a few turns and put it in a container suitable for the blender together with the almonds, bread and garlic, add a glass of water and we shred it all.
  4. Place the already fried asparagus in the same pan and add the previous preparation, bring it to a boil and let it cook over low heat for about 10 minutes.
  5. We are checking that the sauce is not too thick by adding a little more water if necessary.
  6. After 10 minutes, turn off the heat and put the 4 cracked eggs in the pan without breaking the yolk, cover and let the eggs cook with the residual heat.
  7. To serve, place a portion of asparagus in the center, put a little sauce, the egg on top and decorate with a little chopped Serrano ham.
