Grated Carrot Salad Recipe

I had grated carrot at home and the truth is that I didn’t feel like cooking, so this grated carrot salad with mayonnaise was born.

If you know my recipes you will know that I like to combine flavors and although at first glance they are extremely simple dishes, there is always something original and creative to surprise. Well, in this case it is the mayonnaise with a touch of orange that we will use to dress the dish, so don’t miss it!

You can eat this grated carrot salad for dinner or for lunch combined with something else. Dare to try it and then tell me what you think.

Ingredients to make Grated Carrot Salad:

• 100 grams of grated carrot
• 2 tablespoons of Mayonnaise
• ½ orange
• 1 pinch of salt and pepper
• mozzarella cheese balls
• ½ can of sweet corn

How to make Grated Carrot Salad:

For our carrot salad we start by gathering the ingredients. I have bought the carrot grated directly, but you can also grate it yourself using the coarse part of the grater.

As for the rest of the ingredients, remember that everything is to taste, you can add other extras such as pineapple or boiled egg that combine perfectly when preparing carrot salads.

Taking into account all of the above, we continue and prepare the dressing. For them, we mix the mayonnaise with a little orange juice, salt and freshly ground pepper.

Now mix the ingredients in a bowl, starting with the grated carrot and corn, previously drained. It is at this step that you can add extras like diced pineapple, tuna, and tomatoes or even smoked salmon.

To finish, we add the cheese balls and bathe everything with the mayonnaise and orange dressing.

Feta cheese, with its salty flavor, also goes perfectly in this shredded carrot salad. Also, you can try other dressings like the classic honey and mustard.

Reserve in the fridge until serving time and enjoy a lightly chilled shredded carrot salad along with some crackers … bon appetite!
