Ingredients to make Grapefruit cocktail with prawns:
- 2 grapefruits
- 1 lemon
- 200 grams of soybean stalks
- 200 grams of prawns
- 50 grams of black olives
- 25 grams of capers
- 150 ml of oil
- 1 egg
- 1 tablespoon yellow mustard
- 1 pinch of salt
- 1 pinch of pepper
How to make Grapefruit cocktail with prawns:
- Cut the grapefruit in half, empty the pulp and cut it into cubes. In a saucepan, bring water to a boil with a little salt and cook the prawns for about 3 minutes.
- Drain and when they are cold, peel them, setting aside 4 with their heads to garnish and cut the rest into small pieces. Blanch the soybean stalks in boiling water with a little lemon for about 5 minutes. Drain and cool.
- Pass through the mixer the egg with salt, vinegar, pepper, mustard and oil until you get a mayonnaise. In a bowl, mix the grapefruit cubes, the soybean stems, and the chopped prawns and mix everything with a little sauce.
- Fill the grapefruit shells with this mixture and place them in a serving dish. Garnish with the 4 reserved prawns, olives and capers. Serve very cold.
