Grandma’s Vegetable Soup Recipe

We are going to prepare a homemade vegetable soup following the grandmother’s recipe, that is, the one of a lifetime. Although each house has its own touch, vegetable soups are a delight and a good spoon dish. Vegetable soups are very healthy and comforting, especially in winter, when you really want a good bowl of hot homemade vegetable soup. Plus, these soups are quick and easy. Even so, we like to do a lot when we prepare it to freeze it in glass jars and have it for several times, especially for dinner, which is when you want something warm, homemade and light. It is a soup that can be made from many varied ingredients. The important thing for it to be good is that they are fresh vegetables. You can do it with the vegetables that you like the most, but the combination is important, since there are vegetables that give more flavor than others. For added flavor, leeks, cabbage, onions, and celery are great vegetables.

Ingredients to make Grandma’s Vegetable Soup:

  • 1 cabbage
  • 1 stick of celery
  • 1 onion
  • 2 leeks
  • 2 carrots
  • 1 bag of Swiss chard or spinach
  • 1 splash of olive oil
  • 1 stick of celery
  • 1 pinch of pepper
  • 1 bouillon cube (optional)
  • 1 pinch of salt

How to make Grandma’s Vegetable Soup:

  1. Wash all the vegetables and julienne the cabbage, carrots and onion. The rest cut into small squares. The cut of the vegetables is to taste of each one.
  2. Add a splash of olive oil to a large saucepan and heat over medium heat. When hot, add part of the leek and the chopped onion. Let these ingredients poach for 5 minutes to make the vegetable soup more flavorful. Without a doubt, this is one of the tricks of the grandmother’s recipe.
  3. Add the rest of the vegetables, stir everything well and mix.
