Ingredients to make Gourmet Olive Octopus:
- 1 ½ kilo of octopus
- 14 pitted black olives
- 3 tablespoons lemon juice
- 1 ¾ cup olive oil
- For the mayonnaise
- 2 tablespoons finely chopped parsley
- 2 eggs
- Salt
- Pepper
- 3 tablespoons olive oil
- To decorate
- 1 medium potato
How to make gourmet olive octopus:
- Clean the octopus and cook it in a pot with boiling water that covers it, the whole garlic clove, the bay leaf and a medium potato. The octopus will be cooked (soft) when the potato is tender (approximately 30 to 40 minutes). Cool, peel, scraping lightly with a knife and cut into slices or small pieces, Reserve.
- Blend the eggs, salt, lemon juice, pepper and gradually add the olive oil until a thick mayonnaise is formed. Then add the olives and blend until completely melted. Cut the octopus into slices, arrange in a bowl, bathe with the olive sauce and garnish with 3 tablespoons of olive oil forming threads and chopped parsley.
